Upside Down Pear Cake
Ingredients
- 3/4 cup packed brown sugar
- 16 tbsp unsalted room temperature butter
- 1 quart canned pears, drained
- 2 1/4 cups flour
- 1 tbsp baking powder
- 2 tsp cinnamon
- 1 1/2 cups sugar
- 3 large eggs, separated
- 3/4 cup milk
- 1 1/2 tsp vanilla
Instructions
- Preheat oven to 350 degrees.
- In a saucepan, combine brown sugarand 4 tablespoons of butter. Melt over medium heat, stirring constantly. Spreadinto the bottom of a 9-inch round cake pan. Arranged drained pears in a spiralpattern over the sauce.
- In a separate bowl, combine flour, baking powder, andcinnamon.
- In a large bowl, beat the remaining butter with sugaruntil creamy. Next, beat in egg yolks, flour mixture, milk, and vanilla untilwell blended.
- In a small bowl, beat egg whites until a soft peakstage; fold into the batter and spread over pears.
- Bake at 350 for 55-60 minutes. Coolon a wire rack and turn over onto a serving platter.
