Mary's Old-Fashioned Rice Pudding

Ingredients

  • 1/2 cup long-grain white rice
  • 4 cups whole milk
  • 1/2 cup butter
  • 3 eggs
  • 3/4 cup sugar
  • 1 tsp pure vanilla
  • 1/4 tsp salt
  • 1/2 tsp nutmeg
  • 1/4 cup raisins
  • 1/2 cup boiling water

Instructions

  • Soak raisins in 1/2 cup boiling water
  • In a double boiler combine rice and 2 cups milk. Cook over boiling water until rice is
    tender and most of the water has evaporated, about 45 minutes, stirring
    occasionally. Stir in butter.
  • Drain raisins and add to rice mixture.
  • In a bowl beat eggs. Add sugar, vanilla, salt, and remaining milk and mix well. Stir into
    hot rice mixture. Pour into a lightly greased 2-quart casserole and sprinkle
    with nutmeg.
  • Bake at 350 degrees for 50 minutes until firm.
